Thanks alot for this significant question, which spots light on the value of HACCP in Quality and auditing work as well as in manufacturing processes.
== HACCP is so important because it:
= 1- Provides the framework to produce foods safely and to prove they were produced safely.
=2-Specifically focuses on food safety, not all attributes constituting food quality
=3-It is applicable to all phases of food production
=4-Focuses on prevention and control of potential food safety hazards rather than inspection.
=5-Uses of science and technology to ensure the production of safe food.
=6-Covers all types of potential food safety hazards whether they are naturally occurring in the food, contributed by the environment, or generated by a mistake in the manufacturing process.
-a- Biological hazards (e.g. bacteria, viruses)
-b- Chemical hazards (e.g. pesticide residues, and mycotoxins)
-c- Physical hazards (e.g. metal, glass).
=7-Various customers in the food chain required their suppliers to have certified HACCP systems. Therefore, auditable national food safety management standards (FSMSs) were developed.
=8-HACCP strategy is developed to prevent the occurrence of the food hazards by controlling the environment and processes that keep food safe. The strategy is summarized in the HACCP plan.
=9-HACCP main principles also define HACCP importance in each step. The success of a food safety management system depends on ensuring a safe environment to produce food, implementing a proper HACCP program and having management commitment to food safety and the HACCP approach.
=10-Since the aim of your HACCP system is to detect problems before they occur and certainly before they reach the customer, the critical limits chosen shall give you a rapid result.

HACCP is important because it prioritizes and controls potential hazards in food production. By controlling major food risks, such as microbiological, chemical and physical contaminants, the industry can better assure consumers that its products are as safe as good science and technology allows. By reducing foodborne hazards, public health protection is strengthened.
HACCP important to eliminate , reduce & avoid the potential hazards risks ( microbiological , chemicals - physicals ) in addition to other hazards as allergic etc...
the application of HACCP SYSTEN to ensure that the food is safe for consumer also its indicator to controlled manufacturing process & compliance with criteria .
so we can consider that HACCP as firewall for our products from potential hazards risk.
