How to use a proximatry switch instead of incremental encoder?

you can use proximity senser as encoder if you dont need precise accuracy. for more info you can check related posts.

both devices are used for feedback purpose.

 in looms of old models, japenese has used proximity senser for detection of position and rpm of machine.  so it depends on you application.
