Noble rot is a type of controlled fungus otherwise known as Botrytis Cinerea. This main outcome vingneronnes are looking for is to reduce the water content of the grape which results in a more concentrated flavour and heightens sweetness. It's a technique used most commonly - but not solely- in the production of dessert wines throughout Europe.

 

P.S. eiswein is produced using a totally different technique, by freezing the grape. NOT related to noble rot but producing similar results...
