we are working from :5 to10 morning and afternoon from5 to8
1-Using a cold water for mixing the admixture components and for curing.
2- Keeping a concrete materials under shade to prevent a sun heat actions .
3- Placing the concrete in a cold durations.
4- Using an additives that mitigates the hydration heat such as retarders.
Limit the temperature difference to prevent thermal cracking through the use of insulation. Curing methods that artificially cool the concrete should be avoided as this causes variant temperature cooling in different areas making cooling inconsistent . The temperature difference must be controlled until the concrete adequately cools to prevent thermal shock. The cooling time depends on the concrete mix and member thickness, and may extend well beyond the normal curing period.
A CIVIL ENGINEER CAN AVOID HIGH TEMPERATURE PROBLEM IN CONCRETE BY TAKING FOLLOWING PRECAUTIONS.
1. PROGARAME THE MAJOR CONCRETE PROGRAME IN NIGHT TO EARLY MORNING.
2. SPRINKLE THE WATER OVER COARSE AGGREGATES.
3. cOVER THE TRANSIT MIXER (CONCRETE TRUCT DRUM) WITH HASSIAN CLOTH , TO REDUCE THE TEMPERATURE EFFECCT.
4. COVER THE STORAGE OF RAW MATERIAL IF POSSIBLE .
5. REDUCE TTHE WATER TEMPERATURE BY ADDING ICE CUBBES TO WATER.
I THINK THIS IS ENOUGH TO THE QUESTION ASKED.
There are many ways you can have your concrete temperature controlled during concreting and after concreting(till the concrete has achieved required strength). For concreting at smaller scales, like most of the people have mentioned; protecting material from direct exposure to sun, using ice flakes, time of concreting(doing it during low temperature), etc all these are applicable when you are doing concrete at not so much mass level. But when it comes to mass concreting the scenario is totally different we are talking about huge mass of concrete getting placed and going through hydration process so to control the heat of hydration in such condition you can use all the above methods but additional to that you might also want to consider the cold water pipes running through concrete mass at some regular intervals to cool down the concrete and avoid shrinkage cracks.
temp should be controlled in plant only by adding flack ice , calculation are made based on Ambient temperature and transportation time,

A civil engineer will avoid the high temperature on concrete by using the water which has 25 Centigrade temperature, also by curing in the same temperature and to make a curing tank in covered place. Or by keeping them in the 25 centigrade room.

There are a lot product to avoid those case: Ad Mixture during concrete structure element cure.
