Yes you can, but you need to practice it too in some kinds of simulation kits. You should have some simulators so you'll get the best knowledge & capability.
Yes you can learn by watching videos but only for a limited extent, to get proficient you need to do practices.because automation is a game of practices more practices more proficiency and more methods to do the same tasks. Now for practice you should have some hardware(plc and accessories) and software to make some prototypes. or by simulators you also can learn but not all.

I agree with the others. Short answer, maybe you can learn some but not master the knowledge gain in certain product from specific manufacturing if you did not work on them or have a lab simulation. The on job training (ojt) is very important step to master engineer.
It is also base on what is your previous experience. Fresh engineer will gain a lot of knowledge from video on YouTube if he/she never knows about plc even if the video speak about the basic. On other hand experience engineer who know plc, will required more and deeper knowledge from the video. So seeing 100 video on general plc basic will not give more skill it is only review of the skill. For example, the person will compere x product with y. How to configure digital input Port on the new plc with the old plc I have experience with. Where as a person who never know about plc might add digital input information to his or her information.
The answers also change if you are working in Adecmia University as prof. In academic university. Where they have a lot of theory experience with very little industrial experience. I know one prof who had a book on DCS but have little experience on industrial point of view. This prof might design system but he might not able to do engineer do.
I think you should got train practical on any brand to got the required skills.
Because the real world not look like the simulation either emulation.

its very difficult. but you can learn the basics only. you must make program and run it to see the all process makes by your hand.
The youtube videos are more than enough, but practice with demos meanwhile. u will get good idea, but real time experience is more interesting......
