Change in temperature of a substance could be due to conduction, convection or radiation. Only when a heat is transferred from a substance of high temperature to a substance of low temperature, the change in temperature of a substance takes place.

Latent heat, sensible heat and super heat are the terms used in air conditioning.

Latent heat is the heat from a substance is dissipated by evaporation to its surroundings and the medium of course is moisture. Sensible heat is the heat dissipated by convection or radiation to its surroundings and the medium is air. The term superheat is used in the suction side of a refrigerant circuit.
