I think it's because you're so used to CorelDraw. Nothing is complicated with practice.
Adobe Illustrator because it is more popular, powerful, flexible, innovative. Corel Draw is old and not compatible with Adobe Suite like Illustrator as it is one of the family.
Illustrator is the best program to edit PDF, it will also save it without increasing massively the file size (unlike photoshop). I personally dont see any issues with opening pdf in illustrator if it is for edit purpose. if it is to view it, use adobe and foxit.
Because Illustrator Artwork are more then Layer But Corel is Flat Artwork. Peoples are work in open artwork those are not professional. Professional People always keep layer any software. this is necessary for technical.
