I would rather use self-hosted email. Since the control remains within the organization. It will fast and not exposed to the external cyber threat. it can be changed and manipulated according to the company policies and procedures. But I would prefer cloud hosted email when the company is a larger scale and have less IT professional in the company.
Self-hosting is always consider as a best practise, though maintenance is very time consuming but it will effect in total cost.
I will use cloud-hosted email
