Number of projects simultaneously.
It depends upon choice, some prefer one project , some multiple.
In my case, it depends upon nature of projects, some projects require more attention, some require less.
One must develop the skill to focus on different projects as and when required. Its the priority that will determine where most of the focus lies. And that is quite fine because as a leader you ensure that there are competent people under you and they to have desires to achieve and grow. It is your responsibility to teach and mentor your staff. so you entrust them to work on tasks and you remain the task master.
I have held one philosophy in my entire leadership tenure..... and that was to grow my staff so that they sit in my chair. I lead people to replace me .

I can say, as many as possible, as long as cost, time and quality, after all its a matter of "complexity"
Figure out which project is most important, and then try to do that project first before finishing the next one
Logically we suppose to consider the below aspects-:
1. Working hours daily
2. Project management team
3. Project hours a PM can handle
4. Number of projects a PM could theoretically handle
5. Time lost due to project switching
6. Realistic number of projects a PM can handle
I tend to run more than one project at the same time. BEst case sinario one in the beginning, one in middle and one at climax of project...but its events...never happens that way :)
