How to eliminate coliform bacteria in foods ? any methods can I used ?

 Some more specifics would be helpful this question is too broad to give specific advice. There is removing the coliforms in food - heat treatment is the most common and cost effective method. Then there is preventing it from being contaminated / re-contaminated. Personal hygiene practices, equipment cleaning & sanitising, maintenance, design , cross contamination prevention.

  • 1Boil all water that is infected with coliform bacteria. Because the bacteria cannot survive this high temperature, they will be killed when boiled.

    Chlorine bleach can be added to water to kill coliform bacteria. In a well, use one quart if the well is less than100 feet deep,1/2 gallon of bleach for a100- to200-foot well,3 quarts of bleach for a200- to300-foot well and1 gallon or more for wells that are deeper than300 feet. These estimates are based on recommendations from the Ector County Health Department in Texas, and the amount of chlorine bleach needed may vary, particularly if the well water is highly contaminated or if the well is hand-dug. Follow the full instructions (see Resources section) on how to disinfect well water.

    Use ultraviolet (UV) light to disinfect water that is contaminated with coliform bacteria. A UV light is held in a protective sleeve and all infected water is passed through the area. UV light rearranges the DNA structure of the bacteria, making it impossible to reproduce. Excel Water Technologies Inc. provides more information on how UV light kills waterborne bacteria, such as coliform bacteria (see Resources section).

Elemination of coliforms from food after contamination means to check out the level of contamination by plate culture method.

 

In light contamination food, the cooking process for74 C or above is sufficient to eleminate bacteria and make the food safe for human consumption. Chemical treatment may be effective according the kind of the food like Nitrite effect in meat products within the rate of125 ppm in the finished good.

 

In heavy contaminated food the only way is to discard this food or forward it to high temperature treatment to the animal feed production.

Basically, there can be two ways to manage coliform in food and water:

1. Use some preventive methods in farm level like GAPs (clean sources of soil, water and manure) and GMP/ GHP on industry level.

2. if it already happens then check for indicator bacteria, if positive, better to go for some treatment practices either chemical, heat, radiation or steam. But mostly, it is recommended to use preventive methods.
