Sterilization is a process employed to deprive microorganisms of their ability to multiply. The most reliable sterilization process is obtained by application of Heat. The aim of sterilization of meat products is the destruction of all contaminating bacteria including their spores.
The term food contamination refers to contain food or water on what makes it not valid for human or animal consumption, whether harmful micro-organisms or toxic chemicals or contaminated food materials and radioactive killer, which may result consumer suffering of disease or food poisoning .
Here comes the importance of sterilizing food and drinks before eating.

I am not an expert in this field, but to my undestanding, steralization is maintaining a clean non-contaminated environment to secure the quality of the targeted product and in the food industries this is extreamly important to prevent health hazards.
