I Advise you to read (Labview Core1 and Core2) to understand the basics of Labview . After that, you can use youtube and example projects to to practice using the software.

There are some pdf manuals you could have a look.
I could provide you some tutorial on it. Do you have some knowledge in other programming languages? (Think that Labview functions are expressed in blocks (Virtual Instruments)).
