Plastic boards are advisable. Plastic boards have color scheme to specify each for one item of food.

But care must be taken from cross contamination or any plastic flakes or insufficient cleaning and sanitizing surfaces.

In case of Wooden boards should be unvarnished or painted, free from fissures, pure sawed wood, smooth, even surface, cleaned and salted to avoid any insects as cockroaches.

Boeards should be always smooth, hard, intact, clean and sanitized.
