(Personal Opinion based on experience in the Middle East)
Generally: Go against the flow. If standard business hours in your area run from10 to6, try opening from6 to10. And that can be a.m. or p.m. It doesn't have to be everyday; once a week, once a month, or even once a quarter will let you test it out.
Many of your potential customers are working during Dayhours; they're starting the day earlier and getting home later. Your new, more flexible timing, will give them the opportunity to get to your store. You'll be able to attract a whole new clientele. (General customer behaviour--Evening Shopping upto10.00pm)

Yes in definitely does increase in the evenings.. In a GCC Country setting, most customers go to malls and do their much needed pampering through shopping after Isha prayer.. This has been tried and tested as the store operational hours are longer as the next prayer will be early in the morning.. Say3am onwards..
It depends on the market however in Saudi Arabia, Most of customers go for shopping after pray time to avoid late in duties and waiting outside.
