When grapevine takes a bad shape, immediate steps may be taken to clarify what is true and exact to the employees through proper channel from an authentic source.
If grapevine communication, the effect of which is favorable, let it continue so long as the communication contents are good for its intentions and will enhance the reputation of the organization, even there may be a minor deviation from what is exact and is not harmful to any community.
Formal written communication is the best answer.
E-mail, letters & notice-board bill are the best form of communication in such circumstances.

Internal communication is very important for the success of business. Good way is to call the meeting on daily basis for discussing the issues and important points should be in written form to keep the employees well informed.
No better than a life communication !
Meet with the Employee's Representatives in a well round table is a must
Morning meetings, daily discussions, mails and circulars letting staff know on a need-to-know basis would be helpful in maintaining a healthy and informed environment of work. The grapevine works both ways though; sometimes management gets to know what is on the minds of staff as there is always a "smart" worker who might start a rumor hoping it reaches the ears of management.
It is very hard to avoid grapevine communications because most of the times it is based on people's opinions, which generate rumours or baseless information.
I would agree that it may be somehow controlled but cannot be eliminated. People like to talk on every topic regardless of how unaware they are about the subject.
One tool I would suggest is 'to talk to your guys frequently' and get them before other people do that.
