Grayscale Mode to see the most accurate value scale of your pieces. It's what graphic print people choose for true grayscale printing for paper or magazine work or on-screen viewing.

While "Desaturate" does give you an idea of the blacks, whites, and grays in a colored image, it still remains in the colored mode channels
