In hot conditions  the diffusion process  is faster and the molecules of aromatic substances food quickly irritate the olfactory receptors. This cause a resulting signal which sent to the brain.

Any smell will is due to the molecules... so, when it come sto HOT food, the molecules that will cause the smell will be having more kinetic energy than the COLD food molecules(Temperatute less means KE less)
