How do anesthesiologists pass the time during a long operation?

I am not a doctor, but I observed a good number of long surgeries in high school. From what I could tell, the anesthesiologists spent most of their time slumped in a chair monitoring numbers on a screen and looking extremely bored. One of them straight up ate lunch in the operating room, which I thought was hilarious. During that particular surgery, the neurosurgeon had been on his feet busting his ass for seven hours, ordering people around, etc., when I glanced over at the anesthesiologist and saw him sitting in a chair biting into an apple with a glazed look in his eyes.
