If you remove a n AVR From Generator it means that we removed the heart of generation of the alternator , It will not receive voltage to excite to generate voltage ,If and AVR is damaged and not removed from generator then it will result in unsatabilized voltage where it damage equipement on during Generation.

See Generator has its own safety features. AVR is the most important part. If you are facing problems like under voltage or over voltage surely u have to deal with the AVR. AVR is required to increase or decrease the excitation voltage whenever the load varies, so as to maintain the output voltage constant.
The generator will not generate voltage or will generate very low voltage cuz the AVR is responsible for feeding the field windings with a suitable DC current to ensure the creation of magnetic field in the synchronous generators
AVR is the automatic volatge regulator of the generator if removed this the generator could not maintain certain voltage needed then trip will happen due to under voltage trip or over volatge trip.
The AVR, Automatic Voltage Regulator, acts as a capacitor storing power, any spikes in power is held and stored by the AVR circuit capacitors thus delivering the set voltage range which should have been done with pre delivery inspection. Removing the AVR in the total generator circuit will give you fluctuations in output power. It is very important to get your engine speed to correct RPM before adjustment of AVR is done. If engine RPM is out of range. You stand a huge chance of blowing your AVR.
