Should I list the startup companies that I have previously worked for on my CV when applying to big and famous companies?

If they were relevant and successful experiences, you should list that in your CV.

In my viewpoint you need to list all previous experiences when applying to a new vacant post, especially those relevant to the new job.

Of course you mention all the activities that you have made in the previous companies, because they are considered experience
