Sugar is a carbohydrate (which essentially means that it is composed of carbon, hydrogen, and oxygen) that tastes sweet.  Simple sugars like glucose, fructose, and galactose are the ones that most directly affect the human body.  Table sugar is a more complex sugar called sucrose that the body breaks down into the simple sugar types.
