Why we don't make a working-hour schedule of project as like corporate office?

because the working hours for the projects it may be anytime like morning or in evening as per the contractor or the engineers has to finished the work of the project as in the given time but if we make an schedule like an corporate office it may take a long time to fished the project work because the office timings is only8hrs and it is in day time only.
