Roles  Employers Conduct Walk in Interviews are as follow:-

Bulk Recruitment - Employers mainly conduct a walk in when the number of candidates to be hired are in huge numbers. Job seekers come in big numbers and complete the process on the same day.

Instant Hiring - Candidates clearing the interview are mostly given the offer letter on the same day. This is beneficial for both i.e Employers complete the recruitment process in one day and for applicants as they get the job confirmation on the same day.

Low Recruitment Cost - Since the recruitment is done in bulk, the cost of hiring per candidate is less. Many times companies advertise for a job walk in at multiple locations in one single advertisement which also helps in reducing the cost.

Quality Resources - Walk ins are conducted mainly on weekend; so a lot of candidates who are working for Multi National Companies can make it for the interview, since they have an off on weekends. Therefore skilled and talented candidates who would not be able to make it on week days due to job commitment can attend interviews on weekends.

Systematic Process - The hiring process for a walk in interview can be streamlined in advance. Companies shortlist the candidates on the basis of Educational Qualification, then a written test, technical round of interview and then the final HR negotiations. This process helps them to filter the unwanted candidates and get the most suitable candidates at the end of the day.

Better Offer to Joining Ratio - Many employers have experienced a good number of candidates joining the company who were offered during walk in interview. This could be due to the reason as candidates feel comfortable joining the new job where there are many others joining the same day, same project and at the same level.

first let me highlight what your question definition is about;

"A walk-in interview is a job screening that happens without an appointment or scheduled meeting. They are common at career fairs and informal meet-and-greet sessions, and they tend to be relatively short and often consist of only a few questions. Employers may offer candidates a job at the end, but more often than not, the meetings are used as a way to quickly narrow down the applicant pool. Top candidates are often invited for a more formal interview at a later date."

Now, this process is a short one because you meet a lot of people at once and don't have the time to fully apply your technical interview questions, of course you will do so after selecting few who sparked your interest, but the tricky part of it is that you might bypass some good potential candidates due to the fact that you simply got tired of the long hours you do interviews during that time

like the one i have been once after graduation when i was young, and the add was like open day from 10 AM untill 4 PM, so this was like 6 hours interview and it was organised into groups according to the job they are applying for, so seniors get another 2 interviewers while general admin and others get about 3 to 4 recruiters

if you are going to organise a walk in interview day, make sure to organise it in a way to fully be able to grap your opportunity candidate without making errors and adding pressure.
