first let me highlight what your question definition is about;

Now, this process is a short one because you meet a lot of people at once and don't have the time to fully apply your technical interview questions, of course you will do so after selecting few who sparked your interest, but the tricky part of it is that you might bypass some good potential candidates due to the fact that you simply got tired of the long hours you do interviews during that time
like the one i have been once after graduation when i was young, and the add was like open day from 10 AM untill 4 PM, so this was like 6 hours interview and it was organised into groups according to the job they are applying for, so seniors get another 2 interviewers while general admin and others get about 3 to 4 recruiters
if you are going to organise a walk in interview day, make sure to organise it in a way to fully be able to grap your opportunity candidate without making errors and adding pressure.
