Food safety is an important public health concern.For some individuals, foodborne illness may result in a mild, temporary discomfort. Because older adults are a highly susceptible population, foodborne illness may have serious or long-term consequences, and may be life threatening. Older adults are vulnerable to foodborne illness for several reasons. Some of these include:
1- Weakened immune systems
2- Inflammation of the stomach lining and a decrease in stomach acid
3- Decline in sense of smell and taste
4- Living on their own
The causes of foodborne illness are multifaceted. Some major risk factors of foodborne illness are related to employee behaviors and preparation practices in food service establishments. The principle known risk factors include:
-Improper holding temperatures,
-Inadequate cooking, such as undercooking raw shell eggs,
-Contaminated equipment,
-Food from unsafe sources,
-Poor personal hygiene, and
-Others (such as, pest and rodent infestation and improper food storage).
