Be careful of/with people who might deceive you.
Be careful with/of Jane. She’s very angry and she’s looking for an excuse for starting a fight.
Be careful with/of the dog.
Can we use either inter-changeably?
To say “be careful with…” means to tread softly, don’t rock the boat, be sensitive, don’t make sudden moves or controversial assertions. It involves your actions. To say “be careful of”… means to be on guard, be wary, have your radar up. Most people probably don’t observe this distinction, however.

I agree with Mr Muhammad answer's. Thanks for the invitation.
with preposition shold be used.
Be careful with people who might deceive you.
Be careful with Jane. She's very angry and she's looking for an excuse for starting a fight.
Be carful with the dog.
We should use only with preposition not any interchangable.
"be careful with the dog" - you are warning someone who is playing with a dog.
"be careful with/about the dog" - you are warning someone who is going to enter a place where there is a dog.
"be careful of the dog" - not a common usage.
