The Nutrition value of a product decided by a group of experts, by a special analysis for the basic three food groups; Carbohydrates, Fats and Protein then after that another special analysis should be for vitamins and minerals.
but nowadays new food analysis programme called ESHA usually used to analysis any type of food we as a dietitians use it to analysis any kind of food only by using this application.

By the amount of nutrients (vitamins&minerals) in the product in relation to the macronutrients (proteins&fats&carbs)
which you can know from the nutrition label and the ingredients of the product.
for example: sugar is pure carbs without any nutrients so it's nutrition value is very low so there shoudn't be much of it in food.
while rice is also a source of carbs but it contains a good amount of vitamins, minerals and fibers which differs in different types of rice (white,brown,wild) so in general it has a good nutrition value
the same goes for oils and protein powders although they may be good and healthy for you their nutrition value is lower than avocados,nuts & chicken breasts,red meat.
