Good question, First of all, there isn't (as far as I know) something called normal ERP. It is a concept that can be achieved by many available solutions basically driven by the need of the orgnization and its future plans and cost limitations. But what makes SAP deferent than other ERP solution in the market is that they have industry based solutions and Best Practices packages that makes it on a higher level of integation compared to competitors, also they have other solutions that cater for specialized needs complementing those ERP operations. SAP ERP is not always the answer for any industry or company, the decision to go SAP need to be calculated carefully weighing the cost of the maintenance, scaling up and change management (which if an orgnization is not intending to go through and follow best practices and standard solution then will inflate the cost drastically). In my opinion, which might be biased here since I come from an SAP background, SAP is the most mature, integrated and complete ERP solution in the market these days. (For certain industries)

The difference between OpenERP v/s SAP is Open source v/s ProprietaryThat means OpenERP is available free of cost and can be implemented without any hassles - OpenERP consist of variety of modules that can be used for different organizations for eg - there is education module available for institutes, service management for service industries and so on . . . .SAP  - SAP is not available freely which means you need to pay huge amount for implementation again here there is licensing fee as per the number of user increase

Enterprise resource planning (ERP) is a type of business management software suite of integrated applications. It is used by organizations to collect, store, manage and interpret business data from various functions viz. Finance, Purchasing, Manufacturing, Sales, Logistics etc.

ERP software facilitates information flow between all business functions and provides insight into key performance indicators (KPIs) of all business activities in real time.

Whereas SAP SE (Systemanalyse und Programmentwicklung; Systems, Applications & Products in Data Processing) aka SAP is a German multinational software corporation that makes enterprise software. SAP also has ERP suites called SAP ECC and SAP Business One.

Firstly, there is nothing such as 'Normal ERP'. ERP is a generic term used to address software that provides core business functions (Finance, HR, Logistics etc.). It is more of marketing term that may mean different set of core applications from vendor to vendor. SAP's ERP product is differentiated by its maturity (as a software) and immense install base and high level of stability.
