If making a customer-focused product is going to increase your cost and in turn increase your selling price, would you still produce it?

Keep in mind that this is an extremely customer-focused product, which means you'll be serving the exact needs of the customer. Would you still make it even though there's a chance the customers might not buy it due to its higher price?

Yes if you tend towards a niche market it'll make sense, or if you can specialize in producing high value customer will recognize and be willing to pay for it.
