alteast you should have one GC server in each site but if you have more than one GC Server then there will be no problem.

At least one.

If the site has Exchange server you  must have at least one GC

You can enable UGMC instead of GC in a site (in case there is not Exchange).

It is wrong to make infra FSMO GC unless all DCs are GCs.

If you have a RODC with GC in asite it will be ROGC

it takes only one global catalog for the hole domain you can move it from DC to another but it remains one

It is recommended that every AD server should work as Global Catalouge so in case of1 failure other can serve as GC. Hence if you have1 or2 ever on each site each server should work as GC
