Yes table settings should be reversed to accommodate left-handed people because "hospitality means catering for the needs of customers and clients". The best way of giving a lasting impression on customers is to go all  out of the way(going an extra mile) to satisfy them.

If a client is a known lefty then YES

Table setup is a tradition carried down from the Bourgeois society when feasts would include 20+ dishes and thus table setup became more of an art than a service

Nowadays, needs and wants merit a change, so just as dish presentation has changed to match market trends, similarly should table setup.
