My the way the question is put I will assume you are her manager and as a human being it is great that you feel the need to reward her for her performance, however, there is a reason a policy is made and that is to ensure that everyone gets treated equally or otherwise there will be a double rule system which can break the entire eco system of the company.
Talk to the HR or the higher ups and see if a solution can be worked out, perhaps a special employee of the month or year award can be introduced in your company that gives out small rewards based on performance and other factors. There are a few more solutions that can be worked out but it is better if you can sit down and have a talk with HR and/or the higher management to see if something can be introduced because when the employee feels that he/she is not being rewarded/recognized enough, then you can expect that employee to start sending resumes to other companies or develop a negativity in their minds that may affect the work atmosphere in the long run.

Having spent 10 years in construction in the UAE I would suggest that if she has performed extremely well she has already worked many additional hours to her contracted hours. On this basis I would agree to her request but make it cleat that it will not set a president. Since, she is one of the top team member that means she is aware of the company's protocol.well she can be definately conveinced about such situations. It is also important to reward someone performing and for that as well there are several ways to reward her .Now coming to the context she can't take an extra day off because it is not in my hands, if i do it will be a monopoly but i will promise her to give her weekly day off as she wants and will conveince her that on any upcoming days i will be giving her a gift as a reward.
