For testing on site fresh concrete we have to use the Abrams' Cone Test (we do this test in Spain). It is a quality control method to value the concret's consistence and viability before the concrete curing.

Well, I don’t have that much of experience in concreting but during my project monitoring I found;
Sampling - ASTM C172
The sample must be taken from the middle portion of the concrete batch discharge. All tests intended to be drawn from the sample must be completed within15 minutes from the time of collection.
Slump Test - ASTM C143
For the consistency of the freshly mixed concrete.
Temperature Measurement - ASTM C1064
The temperature of the fresh concrete sample is measured and recorded to the nearest degree. This reading is of particular importance, since temperature influences so many of the properties of plastic as well as hardened concrete.
Bulk Density and Yield - ASTM C138
This is to determine a reasonable approximation of the quantity of concrete produced in the batch sampled. Bulk Density is expressed in pounds per cubic foot. Yield is expressed in cubic feet
Pressure Method - ASTM C231
This method is based on Boyle's law, which relates pressure to volume. After the base is filled with consolidated concrete, the lid is latched on. Water is injected through one of the petcocks on the lid until it flows clear from the adjacent petcock. Pressure is then applied by the pump located at the top of the neck to a predetermined reading.
Volumetric Method - ASTM C173
This method is primarily used to determine the air content of concrete containing lightweight aggregates, but may also be used to determine the air content of concrete containing any type of aggregate
These r the test normally follows at site
1. Slump Cone Test
2. Temperature of concrete.
3. Batch slip of Ready Mix concrete which will show the proportions of concrete mix.eg., if the admixture drum has any problem then the over dosage of admixture on the concrete will leads problem in setting.
I thing you need to use Slum Test to chech quality of fresh concrete on site
Please define quality. For me as a structural engineer quality is strenght and evironmental class. But on that you depend on the mixture and certificate, and afterwards at the strength tests.You can not test it when it comes to the site
But for somebody else quality can be how easy it is to pour the concrete.
Also the colour can be a quality.
