I would prefer to work wherever I see that I will better satisfy my needs and want. Wherever I can best serve the business and at least get the standard market benefts.
if you are looking for challenge and adventure try new formed companies.you can accomplish and advance more,but they are riskier.
if you are looking for stability and security go with the well settled company.
i would go with the new established companies,there i can excercise my expertise,passion,and innovative ideas.they are more welcomed in new formed companies.
I am ready to work in a company which just started its business. Such companies offer wider potential to grow as generalist and provide immense opportunities to know the pulse of the business. This will be a greater experience to prepare ourself as enterpreneures...
But, before joining such companies I would enquire on what is the business strategy of the company to establish itself in the market, what are their technology plan, business development plan and what is their approach towards competitors.
if i have experience for that work/responsibility i would like to join new started company.. if i don't have any knowledge about that work/responsibility then i would like to join settled company. :)
I will try my hand in a new company for reasons if it right company for me and is into my area of interest and expertise:
1.I get an opportunity to be a part and contribute to growth of company by utilizing my experience.
2.It will give me right ambience to work and an opportunity to explore my area of expertise,use my skills to identify business and explore newer areas of business.
3.It will give me an apt platform for growth and progression in career.
4.My expertise and skills will be valued and thus I will be able lead and colloborate.
5.I will have an authority and bring ideas which will be implemented and will be detrimental in growth of organisation.
6.Above all it will be a challenge to excel in new environment and prove my leadership with new people.
Being an employee the best important is that you are enjoying with you work even is the business is starting or it was already settled. The best thing is that the company is giving you an oppurtunity to work being an independent that they will trust you.

Depending on the industry that they are into. Although it is good to work for a start up company especially you were offered a major positioin which means that you will be a major part of the company to see to it that it grows to the expactation
