I sudeid the Hyper-V as a part of MCITP Course, but i worked on Citrix XenApp.
Virtualization of Applications with citrix is the best as you can publish your application over the internet with low bandwidth requirement, and at the same time you can protect your data.
Virtualization of OS's, i didn't worked on yet, but what I heard from proffessionals that VMware is the best.

For OS and mostly detailed hardware virtualization VM-Ware is recommended by most award winning IT magazines and industrial giants.
using VMWare you can easily decide on number of cores of the CPU and even more threats used and cache, amount of RAM and HDD drive and all other hardware configurations (general). for general OS management it comes with really handy options like specifically "Unity" which merges you Machine OS and the VM OS together and you can share the same desktop and file Explorer. the capability of advanced netowrking configuration is considerable as well, creating unlimited Virtual NICs and integerated routing schemes which makes it easy for administrators, Microsoft Hyber V provides the same characteristics with less Fancy options (no Unity etc.) although the capability of Storage management and integration with other MS products is awesome.
mostly VMware and HyperV is used for OS and application management with less capabilities of detailed hardware parts. Critix-Zen Server and vSphere are mostly used for server virtualization and more powerful detailed processes. for example for Amazon Cloud infrastructure vSphere is ideal as the customer can order a server with specific hardware parts for different purposes (like data senters).

Sure, for a variety of use cases VMware would be voted as the preferred choice but it's not the defacto. The deciding factors would be the case requirements, budget etc.
i like vmware and citrix .. i have never dealt with hyper-v but may be it's good
It all depend upon clients requirements. For Application virtualization citrix Xen is the best solution till to-date. For server and desktop virtualization VMware Vshpere and Hyper V both are as good as it gets however, Vshpere HA, FT, vMotion, Storage vMotion, Distributed Switch feature are better than MS Hyper -V. Both hypervisors are used in cloud computing. Vsphere is backbone of vCloud Director and Hyper V is used in MS private/public cloud as hypervisor. Citrix Xen server lag behind both Vsphere in terms of and Hyper V.
Actually it depends upon client requirement, there are several features in Vmware which keeps VMWare apart from other Hypervisors, like HA, FT, DRS, VMotion, Storage Vmotion, but for application virtualization citrix is preferred in production environment.
Hyper -V is more optimized for Microsoft products. Haven't used Citrix so can't say anything. Vm-ware is the best I've ever experienced.
I am presently working with Citrix XenServer & Vmware.. Both seems to be amazing.. My client prefers VMware & it have many features & Vmware already documented many issues which will help us in resolving issues in easy way.

It really depends on how you plan to use virtualization and what OS you plan to virtualize. The cost of each solution can be different for everyone when you take everthing into account. Today you have more options than just VMware,Citrix and Hyper-V.
