I would tell the guest that the meal is free and the restaurant will cover for the cost. This will be my first option. The second option is that I will compliment the guest with some free drinks or additional dishes of his choice, I would in all cases provide my deep apologiez to what happened.
Other options are to give free tickets or invite the guest to another meal for free next time but in all cases I would not let the guest leave upset.
