Polycount is the number of faces on your object. Higher polycount doesn't always mean better quality but for games you have to keep polycount fairly low.
To display polycount in Max hit "7" on keyboard which will display the HUD in viewport where you could see the polycount.
In maya you can go to menu display then heads up display > polycount
Poly count is the number of faces you have in the object that you are modeling , the more is the polycount ... the more the file size & rendering time your project will take , but also high poly count is recommended for detailed renderings , like poto-realistic stuff , but low-poly modeling is recommeded for real-time renderings like video games for example ...
Polycount is shortcut for "polygonal count" or number of polygons. Polygon is3D SUB object element that determinants quality of modeled object in3D. In3Ds MAX you can turn on this option by going to viewport statistics properties.
Just Press Number7 on3Ds max and for maya select Display > Heads Up Display > Poly Count.
