Unstructured interviews can be used in a variety of fields and circumstances, ranging from research in social sciences, such as sociology, to college and job interviews
but other fields it's better to use structured interviews

Though its time consuming you need to train the interviewer, because the unstructer technique of being Dumb allow the interviewer to develop the relationship with the participant which could mean they are more open and honest with their answers.
I see that they are useful for certain jobs (higher ranks and innovative ones) and if they are used as one component of a structured interviewing process. They usually allow both parties a deeper exploration of the basis of a deeper relationship.
Unstructured questionnaire might be unsuccessful to find out the right candidate because interviewers do not keep them to the right track and sometime they asked to interviewee awful question.
