I have read your question several times, and I believe that the intention of your question is to know what kind of controls is important in the supply chain. I will try to answer that question from that perspective.

Supply Chain is about (in a very simplistic definition) managing the flow of goods. This includes the movement and storage of raw materials, work-in-process inventory, and finished goods from point of origin to point of consumption. However, supply chains are very different from one to another because different factors might be involved from the point of origin to the location of your customers.

For example: One winemaker in the US has different logistical challenged than a winemaker in France, not only location of the vineyard is a factor, but also, location of the bottle maker, location of service providers, location of the winemaker costumers, and so on….

Also, there might be differences in how each winemaker process and store its products. So the supply chain within the winemaker facility is also different.

So, moving to the specifics of control…. This point will depend in all factors indicated above and much more. The key element to controls is PLANNING; and the planning of the supply chain is specific to each particular company. A complete risk analysis must be performed in order to guide the planning process… once risks are identified, the “planning team” will put “controls” in place to mitigate acknowledged risks.

I know this answer is very generic, but without knowing the particulars and the risks involved, it is not possible to pinpoint what “controls” are more important than others.
