Food safety needs a huge amount of records to be kept in the company i.e. incoming food data, temperature logs, calibration logs, cleaning plans, cleaning verification . So now what is the legal required time to keep such type of data?
there's no legal required time to keep such tipe of documents, it's just your own justification in case of.... i think it must be kept for max.1 month
One year after shelf life ( see BRC - issue6 - clause (3-3-2))
Look for your own state or country regulation. If ther is none, then do risk assessment on possible complaints of the product. Evaluate from delivery to shelf life. The customer will not be using this product if shelf life is known.
First of all, you must try your best to find the local or regional regulations for same. If could not, the general practice is to retain the records at least for a period of time equivalant to the product life cycle or shelf life of your product.
As per my knowledge and experience we have to keep the data until the food which were produced totally consumed to the humen & the remaining expired food in the markets completly discard to till that we have to keep all the needful data about your produced Food.
