The difference between italian and french Meringue Italian Meringue is made of Egg white and Sugar Syrup french Meringue is Made of Egg White and sugar & lemon.

the ingredients are different, as for example in the French we want the icing sugar, lemon and eggs, whereas in the Italian water and eggs a pinch of salt
