When it comes to contributing to a project or a task, when are you considered to be overstepping your boundaries?

Quite simply you are overstepping the mark when you do anything that is not encompassed by your "terms of reference" as an employee, ie. your contract.

I think a person steps over their boundaries when they tell others they're wrong and tell them how to do it from their perspective.

In my opinion we should share our creative and valuable ideas with responsible one. Don't underestimate the ideas of any men working with us.not only that we should give as much as importance to ideas from our superiors also. Think twice and plan well before doing anything.

Just when you step out of playing by the rules of the game

To complete a project, there are tasks to be completed, mind the ones assigned to you and assist those who request your assistance.

Do not take things personal and do not out-shine your superiors

I have been part of few projects, people often turn it into social gathering. In my opinion, it is not right because it should be professional. Nothing is wrong with getting social during a project but it should not be the tune of the tasks to be performed, else, there is no way some will not over step their boundary.

Cheers!
