It is always an advantage and some times important to know the processes of an organization you are auditing, but it is not necessary or mandatory for the auditor to know it. It is a standard practices for some auditors, to be accompanied with Subject Matter Experts or Process Experts, for audits.
But it always is a better deal if the auditor is from the same industry and is at least aware of processes, if not possessing the working knowledge.
