A Haccp is12 step system we cannot divide them into stages. It is a closed circle having5 preliminary steps and7 principles. If we don't have a good haccp team we will not have good Hazard analysis , we would not know how to assign the critical limits and etc...

What is HACCP ?

Hazard Analysis and Critical Control Points -

It is a preventive system means food safety by identifying hazards HAZARDS that threaten his safety, whether biological, chemical or physical, and then determine the critical points CCPs that need to be controlled to ensure product safety.

HACCP system:
