Even if it's hard for you to say or for the other to hear it, if you have made up your mind to share with others the reason, say the truth.
BUT, before asking "what is the best response for leaving your current employer" you have to consider that confidentiality in the market is a must. There for refer to your confidentiality skill and don't share information.
It is better to say the truth but in a diplomatic way....I leave the current Job because I need to acquire a new knowledge, and to be all in one, not one in all, I mean to have different experiences better than one experience in many years.
The best answer could be by stating that you are looking for more development and more tasks to use your skills and knowledge !
If relevant education is in your hands & you want to be the successful person of your future careers, then you need experience to polish your self with different environment & culture, on another way no body can get higher experience untill he/she will not swicth between the companies. The most dangerous & important thing is that you have to secure yourself before switching to another job or company.
