The ideal temperature for bacteria to multiply vary with different species they can be divided in following types:
ü Psychrophiles: they love cool environment and grow in temp below20o
ü Mesophiles: they can grow normally in temp range between35 to45
ü Thermophiles: they are able to grow at temprature higher then80o
ü And most bacteria develop rapidly between20 and40°C.
Temperature requirement depends upon the type of bacteria whether psychrophilic, mesophilic or thermophilic. Psychrophiles prefer low temperature; optimum temperature may be around15-20 degree celsius, eg. Pseudomonas. Most of the pathogens are mesophilic in nature; optimum temperature may be around20-45 degree celsius. Thermophiles prefer a high temperature, may be45-65 degree celsius, include spore formers. The method to promote/eliminate bacterial growth has to be decided based on the specific temperature requirement and related factors of that organism.

Binary fission:Harmful bacteria multiply by splitting in two. This process is called binary fission. Most bacteria will multiply every10 to20 minutes. This means that after10 to20 minutes, one single bacterium will become two. After another10 to20 minutes, these two bacteria will become four. They are most likely to multiply on food that is both moist and high in protein i.e. poultry, eggs, meat products, fish, milk and milk products, dairy products, cooked rice and pasta and meat.
