french meringues are the basic ones where in the sugar and egg whites are beaten to soft peaks and then to a stiff consistency which is raw. in italian meringue a hot sugar syrup is beaten to the softly whipped eggwhites . and further beating it to the peak consistency until the mixture getting cold, here the eggwhites are partly cooked with the heat of sugar syrup.
Italian Meringue is made of Egg white and Sugar Syrup while french Meringue is Made of Egg White and sugar.
In Italian meringues boiled liquid sugar is added in wipped foamy egg wite and mix both together until it gets airy and cool.
