Basically, French meringue is made of egg whites and sugar together then baked while Italian meringue uses sugar syrup into egg whites instead of regular sugar ( where the bacteria from egg whites is killed from the sugar syrup). Italian meringue can be eaten as it is while French meringue should be baked first.
