It would be difficult since at an interview most are on their best behavior. Try asking the interviewee questions that might catch them off-guard prompting non-verbal cues relating to their true inner reactions.
you don't, you can't, you simply cannot place your judgment based on simple interview, the thing about interview it's/ chance, and honestly, I seen some who has display annoyed personality, but turn out one of the best employees, and seen some displayed perfection in interview, yet keep causing problems with other employees which was opposite what he displayed.
So I guess... those who show they are perfect, probably hiding something.
you can say, interview people can act to pretend they are somebody else.
