Motor with AC converter is better. It is slightly expensive but you can control your device efficiently.
Three- phase induction motor with a variable frequency drive(VFD) is the best solution , as induction motors have lower maintenance and troubles than DC motors, and if you need a high starting torque you may use slip ring induction motor, You may send me your requirements and I will give you the technical specs.
it is better to use AC motor with VFD (variable frequency Drive) or VSD (variable speed drive) to control speed of motor. VFD and VSD also offer automatic speed control according to requirment with discrete signal and fast communication methods for remote controlling.

the quistion is not clear but for controling by Ac motor with ac converter that is mean using motor drive inverter AC - Dc- AC to controling by motor speed if we use Ac power source and if we use Dc power source we can use Dc - Ac inverter to controling by motor speed also for prushless Dc motor we can use Ac-Dc inverter this motor small
and if we want to use Dc motor direct we need Dc power source also we need adjust button to up/down the power to control by it's speed and this very bad and it will distroy the motor
