There is only one effective way I know of. Prove them wrong via showing them that you are beyond ethnic stereotypes. Show them that you are among the exceptions. If they generalize your ethnicity then they also believe in the universal rule that there are always exceptions. Be the exceptions. After they realize that then you can start being the standard. Turn their beliefs upside down with facts. Let themselves know there are wrong with their assumptions.
