Depends on Where the Data is stored.if data is stored on a PC/Intranet, it is called On Premise based CRM. if data is stored on a internet based Server/Host it is called Cloud based CRM.

The difference is same as having a private swimming pool all to yourself or going to the community pool which is being jointly used by the individuals of that society.

In cloud bases CRM  you are jointly using the System/Software/Information available on the cloud with others or you can simply save your info privately by taking a share of cloud and your information will be saved on a third party server and the cloud service provider will keep the mechanincal infrastructure and will implement various resources for safe keeping of the data , the tention is on the cloud service provider, also for many(not all) uses it also proves to be cheaper than setting up infrastructure for the same use.

On the other hand, having it on premise keeps the data handly and physically available , you can use it just the way you want. Specially if you are one of those who trust no one more than your own self then you would like to have a setup of your own.It gives you the liberty of investing as per your pocket without getting marketed by cloud computing but the data safekeeping is all on you.

Although both the systems have their own pros and cons, one should thoroughly study your requirement before going for anyone of them.
